Avocado & Tomato Over Yellow Rice (Vegan)
Yellow Rice
2 cups jasmine rice, rinsed
3 cups water
1/4 tsp curry powder
1/2 tsp soup mix (or to taste)
1 1/2 tsp salt
1 tsp olive oil
Cook per rice directions in a covered pot.
Topping
2 medium tomatoes, diced
1 avocado, diced
1/4 medium onion, diced
1/4 tsp granulated garlic powder
1/4 tsp salt (or to taste)
1 tbsp lemon juice
Toss all topping ingredients until well blended, but gently so as to not mash the avocado.
Serve immediately.
